ARANCINI rice balls Recipe

aborio rice
2 large onions
stock
white wine
grated cheese

chopped meat
tomato paste

cubed provolone
frozen peas

Directions:
Directions:
Finely chop onions and brown in olive oil
Add rice to coat (glisten)
Slowly add hot soup stock a cup or so at a time until each is absorbed (be patient)
Add a bit of white wine if you want. Taste to make sure rice is cooked then add cheese and mix thoroughly

Let mixture cool Can be stored in the refrigerator until the next day.

Take a small handful of the rice mixture and flatten
Add a small spoon of chopped meat mixture, a very small cube of cheese and a few peas
Close rice ball and roll in hands to seal

Let all rice balls set

Beat eggs in a plate
In second plate add good breadcrumbs
Roll riceball in egg and then coat with breadcrumb pressing in to make everything stick

They can be saved at theis point.
Finally drop a few riceballs into hot oil making sure the brown all around

Drain and serve.

One time Aunt Lu was giving Connie and friends the recipe over the phone from Florida to Goshen, She started with get a nice chicken, celery, onion and carrots and simmer to make a rich broth. We hung up / looked at each other/ opened some chicken broth / waited a while and called her back. She was amazed how quickly we accomplished this and reminded us to let the broth simmer to get a richer broth
