Pineapple Plank Salmon Recipe

2 pineapples, ends trimmed, sides cut to make 8 "planks"
4 2oz pieces of salmon
1/2 olive oil
2T soy sauce
1/4 c lime juice
1 T brown sugar (I substituted left-over pineapple juice from another recipe!)
4 garlic cloves, chopped
1 t salt
1 c cilantro (I used less in the marinade and none on top of the salmon!)

Directions:

Marinate salmon in above ingredients 1 hour.

Place plank on top of pre-soaked baking string.

Place salmon on pineapple plank, top with sprig of cilantro. Place another plank on top. Tie as shown in picture.

I didn't have baking string so I soaked wooden skewers, cut them to the right length and pierced the pineapple planks in 2-3 places. Say that 5 times, fast!

Grill for 5 minutes, flipping halfway. Timing depends on your grill and temperature. Use a meat thermometer to be sure! It took more than 5 minutes for mine!

Darn tasty! The grilled pineapple minus the "scales" is yummy!
