Tomato Sauce
Ingredients:

1 med onion, minced
1 med clove garlic, minced
2 T oil
28 oz tomatoes
6 oz tomato paste
1 c water
2 T minced parsley
1 t each: basil, salt, sugar
¼ t pepper
Meatballs (recipe follows)
1½ lbs spaghetti cooked and drained
grated Parmesan

In kettle or Dutch oven, cook onion and garlic in oil until tender stirring occasionally. Stir in remaining sauce ingredients; cover and simmer 1 hours, stirring occasionally, Add meatballs, cover and simmer 30 minutes, stirring carefully once or twice. Serve over spaghetti. Sprinkle with Parmesan.
 

Meatballs (no need to brown these ahead)

1 lb ground beef
1 egg
¼ c water
3 T fine dry bread crumbs
3 T grated Parmesan
2 T minced parsley
¾ t salt
⅛ t pepper and oregano

Mix well all ingredients. Shape in 1-inch balls. Makes about 30 meatballs.
