4 lb bone-in prime rib roast (at room temperature for at least 6 hours)
1/4 c unsalted butter, softened
1 T ground pepper
1 t herbes de Provence
kosher salt to taste

Directions:
Preheat oven to 500º. Combine butter, pepper, and herbs de Provence in a bowl; mix until well blended. Spread butter mixture over entire roast. Season roast generously with koshler salt. Roast in preheated over 20 mins (If your roast is larger or smaller than 4 lbs, multiply the exact weight times 5 minutes). Turn off the oven, leaving the roast in the wove with the door closed, let the roast sit in the oven for 2 hours. Remove the roast, slice, and serve.
