3 lbs carrots, peeled and sliced on a diagonal
1/4 c olive oil
1/4 c honey
3 cloves garlic, minced
2 T fresh parsley, chopped
1 t salt
1/2 t pepper
1 T honey + 1 T olive oil for finishing

Directions:
Directions:
Preheat oven to 425º and line baking sheet with parchment paper. In a large bowl, add carrots, olive oil, honey, garlic, parsley, salt and pepper. Toss to coat and then pour onto baking sheet. Bake for 30 minutes, stirring every 10 minutes. Add additional honey and olive oil, toss, and bake for another 8-10 minutes. Top with fresh parsley. Serve.
