1 lb. Italian sausage (can sub ground beef or do a mix)
1 bell pepper, chopped
˝ onion, chopped
2 ˝ cups tomato juice
˝ cup beef broth
1 14.5 oz can diced tomatoes (we use seasoned ones)
1 can navy beans
2 large cloves garlic, minced
˝ teaspoon dried oregano
1 teaspoon dried basil
Salt to taste
Pepper to taste
Parmesan cheese as desired
Slurry of 1 cornstarch & water (equal amounts, about 1 teaspoon of each)

Brown meat, pepper, and onions in a large sauté pan until meat is cooked through. Drain any fat.

In a large pot, add tomato juice, broth, tomatoes, garlic, navy beans, oregano, and basil. Add meat mixture and stir together. Turn heat to medium-high and bring to a boil. Lower the heat to medium-low and simmer for 30 minutes, stirring occasionally. Do not cover.

Add slurry 1 teaspoon at a time to thicken soup.

Add parmesan cheese to desired levels. (J makes it look like it snowed on his soup.) (Alternative version has you add cream in step 3.)
