Ingredients: 1 1/4 c. warm potato water (if available - otherwise use warm, NOT hot water) 1/2 c. mashed potatoes (if leftovers, not too much milk/butter/salt in them) 1/2 c. shortening 2 beaten eggs 4 c. flour 1/2 c. sugar 1/2 T. salt (or less if mashed potatoes already has a lot) 1 pkg. dry yeast OR 2 1/4 t. bread machine yeast
Filling: 1/3 c. very soft butter 1 1/2 c. sugar 3 t. cinnamon

Directions:Add ingredients to bread machine pan in the order listed above. Select dough setting on bread machine. Check several times after starting to scrape sides down and add more flour if needed. Should be a little wet/sticky - not like regular bread dough. When dough cycle is done, dump out onto a floured surface.
Pat out or use a rolling pin to make into a large rectangle. Spread softened butter to all corners of dough. Sprinkle cinnamon sugar mixture over dough, spreading into all corners. Roll up the rectangle the long way and cut into 12 slices. Place on greased 9" x 13" pan. Cover and let rise until light and fluffy. Bake for 15 - 20 min at 350º - 375º.
Spread frosting while still warm. |
