1 1/2 cup all purpose flour
1 tsp baking powder
1/2 tsp kosher salt
1/4 tsp baking soda
1/2 cup unsalted butter, room temp
1 cup packed light brown sugar
1/2 cup sugar
2 large egg yolks
1 large egg
1 1/2 tsp vanilla
10 oz dark chocolate, coasrsely chopped
1/3 cup pisactions, coursely chopped
1 tsp fluer de sel

Preheat oven to 375º. Line two large baking sheets with silicone mats or parchment paper.

In a medium bowl , wisk together flour, baking power, salt, baking soda until combined. Set aside

Using a stand mixer with a paddle attachement, add butter, brown sugar and sugar to bowl. Beat on medium speed until light and fluffy, 3-4 minutes. Beat in egg yolks, egg and vanilla. beat until pale. 4-5 minutes. Scrape down sides as needed

Reduce mixer speed to low. Gradually beat in dry ingredients until just blended. Fold in chocolate and pistachios.

spoon rounded tablespoons of dough on cookie sheet about 1" apart.

Sprinkle each cookie with fleur de sel (salt)

Bake until golden brown on edges for 10-12 minutes (rotate 1/2 way thru). Let cool for 5 minutes and then move to wire rack for cooling
