1 onion, chopped
3 stalks celery, chopped
1 green pepper, chopped
3-4 tablespoons butter
1 tube of Ritz crackers
2 cans of minced clams (only drain 1 can)
1 stick of butter, melted
1 jar of bacon bits

Directions:
Directions:
Dice the onion, celery and pepper. (Sometimes I will use a container of mirepoix to substitute). Put 3-4 tablespoons of butter in a skillet and cook until tender. You may need to add more butter as this cooks.

Pour contents of skillet in a 2-quart casserole dish. Crush the tube of crackers, add the minced clams, melted butter and bacon bits. Stir well.

Bake at 350 degrees for 35 minutes, covered.

I got this recipe from a co-worker at Kodak probably 45 years ago. We have a friend who just loves this and every time I would make it, he'd say I should make two recipes because he could eat one by himself.
