1 cup shortening
2 cups sugar
3 eggs, well beaten
About 4 cups cake flour
1 cup mincemeat
1 teaspoon baking soda
1/8 teaspoon ginger
1 teaspoon cloves
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup chopped nuts

*optional* - maraschino cherries

Directions:

Cream Shortening and sugar thoroughly

Add well beaten eggs to the creamed mixture and enough flour to keep it from curdling

Mix well and add mincemeat

Sift remaining flour with other dry ingredients and add
Add chopped nuts and drop from a teaspoon onto a greased cookie sheet

Allow 2 inches between cookies for spreading

Bake at 375F for 12 minutes

Optional: Push a plump maraschino cherry into each unbaked cookie

Found this recipe in an old cookbook of Alex's and thought it would be a good gift for Aunt Susan as she and I are the only ones who really enjoy mincemeat.

Since it only calls for a cup we splurged on the pre-made mincemeat that had fruit as the first ingredient and I think that was a good decision.

Recipe was a hit and this might replace one of the other cookie recipes for baking day 2024
