3/4 cup (generous) chocolate wafer crumbs
2 Tbsp melted butter
2 - 250 pkg. cream cheese (full fat is best)
1/2 cup white sugar
2 eggs
1 tsp. vanilla
4 oz. melted semi sweet chocolate.

Lightly coat 7" springform pan with spray or oil.
Preheat oven to 325'
Mix crumbs and melted butter well and press onto the bottom of springform pan.
Bake for 8 - 10 min.

Prepare filling
In a medium size bowl beat together the softened cream chees and the 1/2 cup of white sure. Beat until just smooth and scrape bowl to get all cheese blended. Add room temperature eggs one and a time and beat after each addition.
Melt the chocolate - careful not to burn. Stir and let sit to finish melting.
I use the microwave and a glass bowl or measuring cup.
I use mainly semi sweet chocolate and about 1/3 milk chocolate.
I use wafers or chocolate chips.
Add chocolate and vanilla to the cheese mixture and blend until well mixed.
Do not over beat. Pour into prepared pan and bang on counter to get any bubbles out. Bake for 10 minutes at 325' and then turn oven to 250' and bake another 30-40 minutes until the middle is almost set. Turn off oven and leave for at least an hour.
Remove and cool on counter and refrigerate until cold before taking from pan and serving. Garnish with chocolate shavings of either dark, milk or combination of chocolate. Cut with a sharp wet knife. Keep refrigerated and will freeze well.

Cheesecake may be made ahead of serving by 2-3 days. (maybe more)

I have a larger version of recipe for a 9" spring form pan that uses 3 pkg. of cheese, 3 eggs, 3/4 cup white sugar and 6 oz. melted chocolate.
You also increase the chocolate crumbs to 1 cup and 3 T butter.
It just take a bit longer to bake.
