1 pound (about 225g) medium shrimp, peeled and deveined
2 Tblsp butter
Tony's seasoning to taste
2 eggs, lightly beaten
1/2 cup jasmine rice
1 1/4 cup chicken bouillion
1 cup mixed vegetables (peas, carrots, corn and/or diced bell peppers and onion)
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
2 tablespoons vegetable oil, divided
Salt and black pepper to taste
3 green onions, thinly sliced
Optional: 1/2 cup diced pineapple or small pineapple chunks (for sweetness)

Season shrimp with Tony's seasoning. Cook shrimp in 2 Tbsp butter in scotch pot just until done. Remove and set aside.
In the same pot, add beaten eggs and scramble until done. Remove from pot (keeping it separate from shrimp).
Add rice and mixed vegetables to the pot. Stir-fry for 2-3 minutes until the vegetables are tender but still crisp and rice is slightly browned. Add garlic. Cook until fragrant.
Add bouillion, egg, soy sauce, oyster sauce and sesame oil to the rice mixture. Mix well to ensure the rice is evenly coated with the sauces. Cover and cook on low heat until done (about 15 minutes).
Add the cooked shrimp back into the skillet. If using diced pineapple, add it at this stage.
Stir-fry the entire mixture for an additional 2-3 minutes until everything is heated through and well combined.
Transfer the shrimp fried rice to serving plates or bowls. Garnish with sliced green onions if desired.
Serve immediately, and enjoy this delicious and satisfying shrimp fried rice!
