3 C rhubarb
3 eggs
2 Tbs milk
1 1/2 C sugar
3 Tbs flour
1/4 tsp salt
1/4 nutmeg
1 Tbs butter
1 9-inch pie crust

Directions:
Directions:
Preheat oven to 400º.

Line pie plate with pastry.

Cut rhubarb into 1-inch pieces. In large bowl, combine eggs, milk, flour, salt, sugar, and nutmeg. Toss with rhubarb. Pour into pastry. Dot with butter.

Bake 15 minutes. Reduce heat to 350º for 45 minutes. Let cool on wire rack.
