2 carrots, julienned
4 ounces mushrooms, thinly sliced
½ onion, diced small
2 green onions, chopped
6-8 stalks asparagus, 1-1½ inch pieces
4 ounces (½ stick butter)
1-2 bouillon cubes
Salt
Pepper
4 cups cooked long grain rice

Directions:
Directions:
--Melt butter over medium heat and stir in bouillon cubes to disolve

--Saute carrots in butter mixture until they just begin to soften

--Add mushrooms, onion and green onion and saute until onions are translucent

--Stir in asparagus and continue to saute all veggies until your desired level of doneness. Be careful not to overcook asparagus.

--Mix veggies into rice, salt & pepper to taste and enjoy

--From Tim: Thus has always been a delicious side to any meal and I'm really not sure why I don't make it more. You can always adjust amounts of veggies to suit your taste, if you come up with a new/great tasting combo please let me know so I can add it here.
