Assorted baby green lettuce
2 freshly peeled whole pears
2 oz. blue cheese (or more, to taste)
1/2 C. toasted walnuts halves
1/4 C. olive oil
2 Tbsp. raspberry vinegar (can use balsamic)
2 Tbsp. sugar
1/2 tsp. salt
fresh ground pepper to taste

Toast and chop the walnuts. Tear the green lettuce into bite size pieces. Slice, core and chop pears. Crumble the blue cheese. Mix above ingredients in a salad bowl. Mix dressing ingredients and pour over the salad mixture. Leave the peeling and chopping of the pears until last. The pears turn dark quickly.

I discovered this salad in Fayetteville, Arkansas. The crunchy walnuts gives a surprising contrast of texture.
