Red Hot Cucumber Pickles Recipe

Ingredients: Large yellow cucumbers 2 c. pickling lime 1 c. vinegar 1 t. alum 2 oz. bottle of red food coloring
Syrup: 2 c. water 10-11 c. sugar 2 c. vinegar 8 cinnamon sticks 2 bags of Red Hot candies

Directions:Use large yellow cucumbers that are peeled & cut into rings at least 1/2 inch wide. I use a large-mouth gallon jar to measure rings. You will need 2 gallons of rings.
Dissolve 2 cups of pickling lime in 8 1/2 quarts of water. Soak the rings in the lime water for 24 hours - stirring a few times during this time period.
After 24 hours drain off the lime water & rinse well in fresh water. Cover with fresh water and soak for 3 hours & then drain. Put rings in kettle & cover with water adding 1 cup vinegar, 1 t. alum & the bottle of red food coloring. Simmer 2 hours.
Drain off this liquid and discard. Put rings back in kettle and make syrup. Heat all syrup ingredients until almost boiling, stirring until candy melts so that it will not stick to bottom of pan. You need a big enough pot with a lid to hold the rings and syrup mixture. Pour the syrup mixture over the rings & let soak for 2 days. Put your pot back on the stove once a day and bring back to a boil. On the 3rd day remove rings from pot & place into jars. Bring syrup back to a boil and pour into jars over rings. Place lids on jars and place in boiling water bath for 10 minutes. |
