1 cup peeled and cubed horseradish root
1/4 cup rice or sherry vinegar
1/4 cup olive oil
2 tsp white sugar or Mirin
¼ tsp sea salt
2 tbsp mayonnaise
1 tbsp sour cream
1 tsp port ot sherry

Directions:
Directions:
Combine horseradish, vinegar, sugar, and salt in the bowl of a food processor or blender; pulse until blended. Carefully remove the cover of the processor or blender, keeping your face away from the container.

To make horseradish sauce, add in mayonnaise, sour cream and port. Mix well and refrigerate for 8 hours before serving.
