3 c. frozen hashbrown potatoes
¾ c. shredded pepperjack cheese
1 c. cooked ham, diced
¼ c. chopped green onions
4 eggs, beaten
1 (12 fluid oz.) can evaporated mild
¼ tsp. pepper
1/8 tsp. salt

Directions:
Directions:
1 – Preheat oven to 350 degrees. Grease a 2 quart baking dish.
2 – Arrange hashbrown potatoes evenly in the bottom of the prepared dish.
3 – Sprinkle with pepperjack cheese, ham, and green onions.
4 – In a medium bowl, mix the eggs, evaporated milk, pepper, and salt.
5 – Pour the egg mixture over the potato mixture in the dish.
6 – The dish may be covered and refrigerated at this point for several hours or overnight.
7 – Bake for 40 – 45 minutes (or 55 – 60 minutes if made ahead) in the preheated oven or until a knife is inserted in the center and comes out clean.
8 – Let stand 5 minutes before serving.
