16 oz Black Eyed Peas
4 C Chicken Broth
4 C Water
1 lb Carnitas Pork Loin (precooked and diced)
1/2 lb Bacon (precooked and chopped into 1" squares)
1 med Red Onion (diced)
1/2 lg Green Pepper (diced)
4 stalks of Celery (chopped)
7 Garlic Cloves (crushed)
2 Bay Leaves
2 tsp Basil (or 4 Tablespoons of fresh chopped)
2 tsp Thyme
2 tsp Oregano
2 tbsp Smoked Paprika
1 tsp cayenne pepper
3 tsp salt
1 tsp Black Pepper

Directions:
Directions:
1. Precook and cut up Carnitas Pork Loin and Bacon.

2. Mix all ingredients in large pot and simmer for1 1/2 to 2 hours.

Note: Change spicy taste by adding or reducing the Cayenne Pepper. You can also replace the Carnitas Pork loin with ham if you wish to do so.
