3 valencia or naval oranges and four lemons or equivalent
2 cups sugar
1 cup water
Fine granulated sugar for coating (icing sugar)
slice both ends of citrus cut peel on each into 4 or more vertical segments depending on size - removing the pith(white )
the less the pith the more leathery the peels will be

Directions:
Directions:
boil peels in water for 15 minutes
drain rinse and drain again
discard water from pot
repeat one or two more times to remove bitterness

add fresh water and the sugar to the pot and bring to boil
boil until sugar is dissolved
Add citrus peels
reduce heat to low and simmer 15-20 min
stir occasionally
peels should become translucent and the syrup becomes lightly syrupy

let dry 2 days
