4 eggs
1 1/2 c sugar
3 cups whole milk
2 cups heavy cream
1 1/2 tsp rum flavoring
Optional: Nutmeg, preferably whole for grating

Directions:
Directions:
Separate all eggs. Beat whites to soft peaks and set aside. Put yolks into an electric mixer and beat on high for 5 minutes (until soft and light). Add all sugar to yolks. Beat on low for 1 minute. Add milk, cream, and rum flavoring to yolk mixture, beat on low. Add the beaten egg whites to the mixture and stir until most lumps become smooth. Transfer into storage bottles - refrigerate for 1-2 days.
To serve: pour into glass. Top with a grating of fresh nutmeg if desired.
Makes about 2 quarts.
