Ingredients:  
1 C salted butter
1 1/2 C sugar
Zest of 1 lemon
1 t vanilla
2 eggs ( room temp)
2 C Ricotta
4 C flour
2 t baking powder

Mix butter and sugar till creamy. Add zest, vanilla, eggs, ricotta. Mix well. Add flour and baking powder a little at a time.

Use med size ice cream scoop or tablespoon. Bake 350 - 10 min

Icing
2 C powdered sugar
Juice from 1 lemon
Add tiny bit of milk if it’s too thick.
Dip cookies, add sprinkles
