5 lbs. potatoes
1 c. salted butter (divided)
32 oz. carton chicken broth
8 oz. cream cheese
¼ c. milk
Directions:
Directions:
1. Peel and cut the potatoes into 1 inch chunks.
2. Place the potatoes and 1/2 c. of the butter (cubed) in the crock pot.
3. Pour the chicken broth on top.
4. Cover and cook on high for 4-5 hours (until fork tender).
5. Carefully drain the excess broth from the cooked potatoes and return to crock pot.
6. Mash the potatoes with a masher or mixer until desired consistency.
7. Season with salt & pepper to taste.
8. Add in remaining 1/2 c. of the butter (cubed), cream cheese, and milk.. Mash together until combined. Add more milk if desired.
9. Cover and keep potatoes on the warm setting until ready to serve.
