1 1/2 lbs Boneless beef New York strip steak, thawed

Madagascar Sauce:
42 Green Peppercorns crushed
2 T butter
1/4 c sherry
1/2 c beef stock or consomme
1/4 c heavy cream (or half & half)

To prepare for Freezing:
1. Bag Steaks
2. Combine all ingredients for Madagascar sauce in a quart size baggie
3. Put both bags in a gallon size freezer bag
Freeze

Thaw in Refrigerator
Preheat oven to 400ºF (convection roast, with medium steam if you have that option).
Put the sauce mixture in a sauce pan and simmer on low heat until sauce coats the back of a spoon. Keep warm.
Heat an oven proof skillet (cast iron) with 1 T olive oil over medium high. Salt an pepper steaks. Heat and sear steaks on both sides for 3-4 min. or until browned. Transfer the skillet to oven and roast for 10 minute or until the internal temperature is 135º for medium rare.
Serve steaks with sauce.

This cooked quickly and using the new steam feature and temperature probe on our oven worked very well.
