2-3 lbs. pork loin
1 large onion chopped
1 16 oz. jar salsa verde
1 4 oz. can diced green chilis
2 tsp. minced garlic
1 small can tomatillo’s
2 cups chicken stock
1 tsp. cumin
1 tsp. oregano
1 tsp. coriander
salt
pepper
1/2 bunch cilantro

Directions:
Directions:
1. Remove excess fat from pork loin. Cut into 1 inch cubes
2. Season with salt and pepper
3. Drain tomatillo’s and blend with cilantro
4. Heat 2 tablespoons oil in heavy skillet and brown pork in two batches for about 5 minutes stirring frequently.
5. Put pork in slow cooker.
6. Sauté onions until they release juices and add garlic for about a minute
7. Add to crockpot.
8. Add remaining ingredients and cook for about 4 hours on low.
9. Serve with sour cream and additional cilantro as an option.

If the sauce is too thin you may want to thicken it with a bit of a flour/water slurry.
