Ingredients: 3 cups all-purpose flour 2 cups sugar 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 3 eggs, beaten 1 cup vegetable oil 1-1/2 tsp vanilla 1 ( 8 oz. Can crushed pineapple, undrained 2 cups chopped bananas 1 cup chopped pecans

Directions: |
Directions:Combine the first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and bananas. Spoon batter into 3 greased and floured 9” cake pans. Bake at 350º for 25 - 30 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes. Remove and cool completely. Spread frosting between layers and on top and sides of the cake. Sprinkle 1/2 cup chopped pecans on top. Garnish with halved maraschino cherries. |

Ingredients: 1 ( 8 oz.) pkg cream cheese, softened 1/2 cup margarine, softened 1 ( 16 oz.) pkg. Confectioners sugar, sifted 1 tsp. Vanilla

Directions:Cream cheese and margarine until smooth; add sugar and vanilla; beat until light and fluffy. (chopped maraschino cherries may be added to 1/3 of the frosting to go between the layers). |

Notes: This cake is one that Aunt Lyne loves for grandmother to make. It is very good. When grandmother worked at Georgia Pacific, almost everyone in the office would order this cake from me at either Thanksgiving or Christmas.
