2 cups all-purpose flour
2 tsp. soda
2 tsp. cinnamon
2 cups sugar
1 tsp. salt
1-1/2 cups vegetable cooking oil
4 eggs
3 cups grated carrots


Directions:
Directions:
Sift together flour, soda, cinnamon, sugar and salt. Stir in oil and eggs, one at a time. Mix well. Add carrots. Mix well. Line two 9” round pans with waxed paper and grease well. Pour in batter. Bake at 350º for 35 minutes.

1 ( 8 oz.) pkg. Cream cheese
1 box confectioners’ sugar
1/2 stick butter, softened
2 tsp. vanilla
1 cup chopped pecans

Beat ingredients together and spread on layers and on top of the cake.
