2 cups softened butter
1 pkg. (16 oz.) light brown sugar
6 eggs
3 tbs. instant coffee
3 tbs. hot water
1/2 cup milk
1 tsp. vanilla
4-1/2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
4 cups chopped pecans

Beat softened butter at medium speed until creamy. Gradually add brown sugar; add eggs one at a time, beating well after each. Dissolve coffee in hot water; stir in milk and vanilla. Combine flour, baking powder, and salt; add to butter mixture, beginning and ending with flour mixture, beating at low speed after each addition. Fold in pecans. Pour into a 10” greased and floured tube pan. Bake at 325º for 1 hour and 30 minutes. Cool in pan for 10 - 15 minutes; remove and cool completely. This is good without any glaze but if you want one you can use this one; just glaze the cake while it is still warm.

1 tsp. soda
1/4 cup butter
1/2 cup buttermilk

Combine all ingredients and cook over low heat for 5 minutes. Spread over warm cake.
