5 Roma tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 c green onions, chopped
1 9" pie shell
1 c mozzarella cheese, shredded
1 c white cheddar cheese, shredded
1 pkg Boursin cheese
3/4 c Mayonnaise
2 tbsp fresh Parmesan Cheese
salt and pepper to taaste

Directions:
Preheat oven to 350º. Cut an x into the bottom of the tomatoes then place in a pot of boiling water for about 90 seconds. Then place them in a bowl of ice water. Let cool then peel. They should still be firm. Slice them 1/4" thick. Sprinkle tomatoes with salt and let them drain for about 10 minutes on paper towels.
Bake the pie shell for 10 minutes at 350º. Prick the bottom and sides with a fork. Let cool. Layer tomatoes and basil into the bottom of the pie crust.
Combine cheeses with the mayonnaise. Spread the mixture evenly over the tomatoes and bake for 25-30 minutes. Let cool about 10-15 minutes before cutting. Garnish with basil and parmesan before serving.
