4 medium sized baking potatoes
2 tsp scallions
¼ cup butter
¾ cup sour cream
3/4 cup shredded, sharp cheddar cheese
Oil

Twice Baked Potatoes for a small family
4 medium sized baking potatoes
2 tsp scallions
¼ cup butter
¾ cup sour cream
3/4 cup shredded, sharp cheddar cheese

Wash potatoes well. Prick with fork. Rub outside with oil. Bake in 425 degree oven for 45 minutes. In the meantime, chop and saute the scallions. Shred cheese. Cool until potatoes until manageable to touch. Cut each potato in half lengthwise. Scoop out pulp leaving a slight shell. With a mixer, mix together potato pulp, scallion mixture, sour cream and shredded cheese. Scoop filling back into potato shells. Sprinkle with paprika. Place in baking dishes and bake 375 degrees for 30-35 minutes or until golden on top. Serves 8.
