5 pound Pork Belly
1/3 course salt
1 cup brown sugar

trim belly
mix ingredients
rub onto belly and bag(seal) with remainder of ingredients that did not sick
place int fridge - flip occasionally for 12 days
pull and rinse and ingredients

smoker at approx 200/220 until internal temp is 175/180

pull let stand - chill min 4 hrs (overnight)and slice.
