560g chicken thighs cut into 4cm chunks
300g tender stem broccoli cut into 4cm pieces
50g creamed coconut
2 tbsn Thai red curry paste
3 tbsn Smooth peanut butter (Whole Earth Super Smooth Drizzler is the best to use)
2 x 275g packs fresh egg noodles
1 tspn vegetable and mixed herb stock paste
1 Red chilli
2 Spring onions
Lime juice (optional)

Directions:
Boil a kettle and preheat over to 180ºC, gas 4. Put stock paste and creamed coconut in a mixing bowl and whisk in 250ml of just boiled water, then whisk in the curry paste and lastly the peanut butter. Put the chicken chunks in a large baking dish and pour over the sauce. Cover with foil and bake for 25 minutes.

Remove foil. Stir the chicken and sauce, then stir in the broccoli. Return dish to oven and cooked, uncovered, for 10 minutes until chicken is cooked through.

Just before the chicken is ready, heat the noodles then combine them with the chicken and broccoli and serve scattered with sliced chilli and spring onions. Add a squeeze of lime juice, if liked.
