1 tsp. olive oil + 1 tbsp. butter
3 large eggs, scrambled
1 lb. chicken breasts or thighs (cooked and shredded)
½ cup of Texas Green Sauce
1 medium yellow onion, diced
1 medium carrot, peeled and diced thinly
4 cloves of garlic, chopped
½ tbsp. red pepper flakes
1 tsp. chili paste
salt and pepper to taste
1 tbsp. butter
4 c. rice, cooked, at least one day old
4 scallions, chopped
¼ c. soy sauce
2 tsp. fish sauce
1 tbsp. sesame oil

Heat 1 tsp. oil in a skillet over medium heat. Add three forked eggs and cook, stirring until the eggs are set and are nice and fluffy. This should take about 2 minutes. Transfer to a small bowl and set aside.

Return the skillet to medium heat and add one tbsp. oil. To pan, add chopped chicken, Texas Green Sauce, onion and carrot. Cook for 7-8 minutes, stirring occasionally, until the chicken is thoroughly cooked and slightly browned.

Add in the garlic, chili flakes, chili paste, and salt and pepper. Cook for one minute until you begin to smell the garlic. Add the butter and allow to melt.

Stir in the rice, green onions, soy sauce and fish sauce. Lightly stir the rice for 5 minutes, stirring to completely combine all ingredients.

Stir in the sesame oil and the scrambled eggs. Plate and garnish with chopped scallions. Serve hot.
