1 lb. ground beef
3 tbsp. fish sauce (or soy sauce)
1 tbsp. brown sugar
3 cans (13.5 oz.) coconut milk
4 c. water
2 tbsp. lime juice
zest of 1 lime
1 lb. shredded kale
2 Thai chilies, whole (optional)
salt & pepper to taste
lime wedges (optional)

Directions:

In a large pot over high heat, cook ground beef with fish sauce and brown sugar.
Add remaining ingredients and cook until kale is tender, about 20 minutes.
Serve with lime wedges.
