2 lbs. - Morrell Snow Cap Lard
2 cups of sugar
juice of 3 oranges (no pulp)
1 pkg. of anise seeds (1 ounce)
2 eggs
12 cups of flour
2 teaspoons baking powder
1 teaspoon salt

Directions:
Directions:
350º - 10-13 minutes

1) Use stand mixer to mix lard to be light and fluffy.
2) Juice 3 oranges.
3) Crush the anise seed with rolling pin or something that will release the flavor.
4) Add sugar to the lard - keep mixing to be fluffy.
5) Lower the speed of mixer to add orange juice.
6) Add crush anise seeds to the mixer; add eggs and keep mixture being fluffy.
7) In a separate bowl add 12 cups of flour, baking powder, salt and mix.
8) Take a super large bowl (metal one I have) put the wet mixture and now add a little at a time the dry mixture (flour mixture) until its all mixed in by hand.
9) Flour surface, and roll dough out a 1/4 to 1/8 inch thick. Cut out shapes with a cookies cutter or use a cookie press.
10) Once you remove the cookies from the oven dip them into a cinnamon/sugar mixture. TIP: LET COOKIES COOL A FEW MINUTES BEFORE ROLLING IN SUGAR.


NOTE: ADD more flour if necessary to prevent it from being sticky.
