Ingredients: 2 cups flour 3 tsp. baking powder 1 tsp. salt 3 Tbls. butter, melted 1 cup sugar 2 eggs, beaten 1 cup milk 2 cups fresh cranberries

Directions: |
Directions:Preheat oven to 350º. Coat 9x13 pan with non-stick spray. Sift flour into mixing bowl. Gently stir in baking powder and salt. Using an electric mixer, beat melted butter and sugar until well blended. Add eggs, beating again. Alternately add the milk and the dry ingredients, beating after each addition. Fold in cranberries. Transfer batter to cake pan, smooth batter. Bake, uncovered, for 25-30 minutes or until cake tester inserted in center of cake comes out clean. Allow cake to cool. Cover cake until ready to serve. |

Vanilla Sauce |

Ingredients: 1 cup butter 2 cups sugar 1 cup whipping cream 2 tsp. vanilla

Directions: |
Directions:Combine sauce ingredients in saucepan over medium heat. When sauce begins to simmer, reduce heat to medium and simmer 10 minutes., whisking constantly, making sure sauce doesn't boil over. Remove from heat and allow to thicken slightly.
To serve: put small holes in cake. Pour half of the sauce over the cake. Plate pieces then add additional sauce over top. |

Notes: Add sauce right out of oven if plan to serve this within 2-3 hours of baking. Otherwise pour sauce over cake when serving.
