2 2/3 cups pre-sifted flour

2 cups sugar

1/4 tsp baking powder

1 1/2 tsp baking soda

1 1/2 tsp salt

1 tsp cinnamon

1/2 tsp cloves

1/2 tsp allspice

1/2 cup shortening

1/2 cup water

1 1/2 cups unsweetened applesauce (Aunt Phyllis uses frozen homemade applesauce)

1 large egg

Penuche Frosting

1/2 cup butter or margarine
1 cup brown sugar
1/4 cup milk
2 1/2 cups powdered sugar
1/2 tsp vanilla but Aunt Phyllis has a tendency to add 1 tsp

preheat oven to 350

Grease and flour and baking pans (Aunt Phyllis uses Pam instead)

Sift together flour and other dry ingredients into mixing bowl. Add shortening and water and beat for 2 mins. Add applesauce and eggs and beat until is mixed all together.

Turn batter into pans and put into the oven for 25 to 30 minutes. Cool for 3 minutes so it comes out easier from the pan. Then turn on to rack to cool.


Penuche Frosting Directions:

In a saucepan combine butter or margarine or brown sugar. Bring to boil and stir (Aunt Phyllis says to watch it like a hawk) 2 mins, add the milk boil for 2 more mins. Remove from heat and gradually beat confectioners sugar and vanilla into the frosting.

Francis loved this cake. I think he liked the frosting the most. Aunt Phyllis likes this recipe because it is cheap and quick to make.

You can make this as one 13 x 9 1/2 inch cake or two 8 inch layers.
