1 lb. white navy beans (rinsed and soaked overnight in cold water)
2 Tbsp. dark brown sugar
1/4 lb. salt pork or hog jowl cut into 1/4 inch pieces
2 cloves garlic
1 1/2 tsp. salt
1 medium onion, diced
1/4 c. molasses
2 Tbsp. Dijon mustard
1 tsp. ground ginger
1/2 tsp. pepper
1 large green pepper, diced

Drain water off beans, cover beans with fresh water to cover. Bring to boil and boil for 10 minutes. Drain. Reserving liquid. Heat oven to 325º. Place half of pork on bottom, also half of the onion and pepper in a large baking dish. Put half of the beans, then repeat, rest of pork, onions, pepper with reserved liquid and pour over beans. Add as much water as needed to cover beans by 2 inches. Cover and bake 4 to 4 1/2 hours, stirring occasionally. Add water to keep beans moist.

Be sure the molasses , brown sugar, mustard, salt, ginger and pepper has been thoroughly mixed with reserved liquid before adding it to the beans.
