1 lb ground Italian sausage
1 medium yellow onion, chopped
3 lg carrots, chopped
2 stalks of celery, chopped
3 cloves of garlic, minced
1 T. Italian seasoning
½ t. each - salt & pepper
4 c. beef stock
¼ c. cornstarch
¼ c. water
3 cans evaporated milk
1 - 10 oz pkg fresh 3 cheese tortellini
2½ c. fresh baby spinach
1 c. milk

Turn instant pot onto saute. When hot add sausage & garlic and cook until meat is browned. Then add the carrots, celery & onion & cook until fragrant (about 4-5 minutes). Turn instant pot off & add the seasonings, the beef stock & the tortellini. Set instant pot on manual for HALF of the time it mentions on the tortellini package. Mine said only 3 minutes so I cooked it for 1 minute on manual/high pressure.

When the timer is up, do a quick release. After the pin drops, turn the instant pot off and then back onto saute. Add the evaporated milk & regular milk & heat until boiling. While milk is heating, mix together the cornstarch & water. After milk comes to a boil, add the cornstarch mixture & stir well. Cook for another minute & turn instant pot off. Add the spinach & stir until wilted. Let soup sit for 2-3 minutes to thicken. Serve with crusty bread & enjoy!
