Marinade ingredients
Juice from one whole lemon
6 cloves garlic crushed
2 Tbl honey
3 Tbl olive oil
1 tsp salt, pepper, paprika
2 Tbl chopped parsley

Other ingredients
2-3 pounds chicken
1 large sweet potato cut in one inch cubes
1 sweet onion chopped
2 handfuls cherry tomatoes
1 yellow squash
I zucchini
about 20 Kalamata olives
Extra salt
3/4 cup Chicken broth

Directions:
Directions:
1. Put the chicken and the marinade in a zip lock bag. Set in frig for at least 4 hours
2. When ready to cook, preheat the oven to 350 degrees
3. Spray the pan with olive oil
4. Put veggies in the pan
5. Put chicken on top
6. Pour marinade and chicken broth over the top of the food
7. Sprinkle with salt
8. bake uncovered for 60 minutes
9. Let rest for 10 minutes
