2 lbs pork sausage
4 green onions
1/2 green bell pepper
1/2 red bell pepper
10 oz frozen spinach, thawed & drained well
1 dozen eggs
1/4 cup milk
1 cup sour cream
2 cups shredded cheddar cheese
Grated Parmesan for top

Directions:
Directions:
1. Brown and crumble the sausage in a non-stick skillet.
2. Chop the green onions, green bell pepper, and red bell pepper. Add to sausage when meat is almost done.
3. Mix together the eggs, milk, sour cream, and cheddar cheese.
4. Combine all ingredients. Mix well. Pour into a 9 X 13 casserole, or 2 deep dish pie plates. Use cooking spray to prepare the pans.
5. Bake at 350º for 35-50 minutes.
6. Sprinkle grated Parmesan generously over top and broil until lightly browned.
