2 T butter
½ cup finely chopped onion
1 pound carrots, shredded
3 potatoes, shredded
6 cups vegetable broth
½ tsp dried thyme
1 bay leaf
Dash crushed red pepper
½ tsp Worcestershire sauce
1 ½ cups milk
2 cups cheddar cheese, shredded

Directions:
Directions:
Saute onion and butter in large pot. Add carrots, potatoes, broth, thyme, bay leaf, red pepper and Worcesterhire sauce and simmer until vegetables are tender. Blend soup. Stir in milk and cheddar cheese. Stir just until cheese is melted. Serve with chopped parsley, if desired.
