Starter Ingredients: 1 package active dry yeast, 1 c. milk, 1 c. flour, 1 c. sugar

Batter Ingredients: 4 c. flour, 3c. + 3 T. sugar, 2 1/2 c. milk, 2 small boxes instant pudding mix, 1 1/2 tsp. baking powder, 1/2 tsp. salt, 1 1/2 tsp. + 1 tsp. cinnamon, 1 c. vegetable oil, 2 large eggs, 1 tsp. vanilla

Dissolve yeast in small amount of warm water. Mix all starter ingredients together in ample size bowl and pour into gallon size Ziploc© bag. This is day one of the recipe, the next day go to step for day 2 and so on.

* Day 1 (if starter was a gift) Receive fermented starter in Ziploc© bag. Put bag on counter. Nothing else is required today.
* Day 2 Squeeze bag several times.
* Day 3 Same as day 2.
* Day 4 Same as day 2.
* Day 5 Same as day 2.
* Day 6 Add 1 c. flour, 1 c. sugar, and 1 c. of milk. Squeeze bag several times to mix.
* Day 7 Same as day 2.
* Day 8 Same as day 2.
* Day 9 Same as day 2.
* Day 10 In large non-metallic bowl, combine contents from bag with 1 c. milk, 1 c. flour and 1 c. sugar. Mix with wooden or plastic spoon. Pour 1 c. of batter into 4 - 1gallon bags. Give these starters, with instructions, to family and friends.

To the remaining batter in bowl add: vegetable oil, 2 c. flour, 1 c. sugar, ½ c. milk, vanilla, salt, eggs, pudding mixes, baking powder, and 1 1/2 tsp. cinnamon.

In separate bowl, mix 1 tsp. cinnamon and 3 T. sugar, sprinkle into well greased 9 x13 pan. Pour batter into pan and bake at 325º for 1 hour or until toothpick comes out clean at center.

DO NOT use metal bowls or utensils and DO NOT refrigerate. Warmth is vital to the fermentation process. As air builds in the bag, let it out or bag will burst. It is normal for the batter to thicken, bubble and ferment (stink).
Use your favorite flavor of instant pudding. Tried and true favorites are vanilla, banana, lemon and orange but, please experiment and let me know which ones work for you.
