3 Tablespoons Minute Tapioca
3 Tablespoons sugar
1 egg yolk
2 Tablespoons sugar
⅛ teaspoon salt
2 cups milk
1 egg white
¾ teaspoon vanilla

Directions:
Directions:
Mix tapioca, salt, 3 tablespoons sugar, milk and egg yolk in a saucepan. Let stand 5 minutes. Beat egg white until foamy, gradually beat in 2 tablespoons sugar, beating to soft peaks. Set aside. Cook tapioca mixture over medium heat to a full boil, stirring constantly 6 to 8 minutes. Gradually add to beaten white, stirring vigorously to blend. Add vanilla. Cool 20 minutes. Stir. Serve warm or chilled. Makes 2¾ cups or 5 servings. I would add drained crushed pineapple to the pudding and you may need to increase sugar for sweetness.
