2 cups all purpose flour
½ teaspoon salt
6 Tablespoons shortening
2 Tablespoons chilled butter
½ cup chilled orange juice
Filling:
3 pounds of baking apples
juice of one lemon
¾ cup sugar
1 teaspoon cinnamon
⅛ teaspoon salt
4 Tablespoons butter

Crust:
Mix flour and salt together add butter and shortening. With a pastry blender cut the shortening, and butter into the flour and salt until crumbly. Gradually add orange juice and continue mixing until dough begins to hold together. Form into two balls. Wrap in plastic wrap and chill while preparing apple filling.
Apple filling: Peel and core apples. Cut into ½ inch slices into a large bowl. Sprinkle apple slices with lemon juice. Mix sugar, cinnamon and salt mix with apple slices.
Roll one ball of dough into a 9 inch circle to fit a deep dish pie plate. Layer the cinnamon sugared apple slices into the pie shell and dot with butter until all ingredients used. Roll out second crust. Cut strips 1 inch wide. Weave strips in and out in lattice design or roll out large enough to cover pie. Sprinkle with sugar. If using full cover of crust make slits to release steam. Seal crust around edges. Bake at 425º for 30 minutes then reduce heat to 350º for an additional 30 minutes. Cool on rack for 30 minutes before serving.
