½ cup shortening
½ cup butter
2 cups packed brown sugar
2 eggs
¼ cup water
1 teaspoon vanilla
4 cups sifted flour
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup shredded coconut

Directions:
Directions:
Mix shortening, butter, sugar, and eggs. Stir in water and vanilla. Sift in dry ingredients. Mix in Coconut. Chill 2 hours. Roll into balls the size of walnuts. Place 2 inches apart on greased cookie sheet. With fingers, flatten each ball into a small rectangle 1½ inch by 2½ inch cookie. Press each cookie oblong with floured tines of fork creating a washboard effect. Bake 8-10 minutes at 400º. Makes about 5 dozen. Don't overbake.
