2 tsp. margarine
1/2 c. each chopped celery, onion and grated carrots
2 cloves minced garlic (can substitute garlic salt for this and salt listed below)
1 packet instant beef or chicken broth and seasoning mix, dissolved in 1 cup boiling water
12 oz. diced pared potatoes
dash of pepper
1 Tbsp. minced fresh parsley
1/2 tsp. salt

In 10 inch nonstick skillet heat margarine over medium heat until bubbly and hot; add celery, onion, carrot and garlic. Saute, stirring occasionally, until vegetables are softened, 1 to 2 minutes. Add remaining ingredients, mixing well. Reduce heat to low, cover and let simmer until potatoes are fork tender, 15 to 20 minutes.
