1. Bacon (six to eight strips) cut into 1/2 inch pieces.
2. Sausage ( Two pounds) One pound of Jimmy Dean’s mild sausage and one pound of Jimmy Dean’s hot sausage.
3. Potatoes ( Three large or five medium potatoes sliced thinly. You can peel the potatoes or leave the skin on them).
4. Garlic ( three cloves or two teaspoons of minced garlic
5. Onion ( one large white onion, diced)
6. Salt and Pepper ( season to taste )
7. Chicken Broth ( eight cups Swanson’s chicken broth
8. Kale ( four to six cups)
9. Heavy Whipping Cream ( one cup)
10. White wine vinegar ( two tablespoons)
11. Add the memory of Peanut’s puppies and you’re good to go! (Family inside joke!)

In a large pot, fry the bacon over medium heat until crisp. Remove bacon to drain on paper towel lined plate.
Set bacon aside for later.
Add sausage to bacon drippings in pot until it is cooked nice and brown over medium heat. If it looks too dry add 1/4 cup of water. Add the onion and the garlic to the sausage and stir. Let simmer for a few minutes. Now add the sliced potatoes to the mixture. Allow potatoes to steam and slightly soften for about 5 to 7 minutes. Next, add the chicken broth. Increase heat to high and bring to a boil. Reduce heat to medium low and simmer until potatoes are fully cooked (10 - 15 min). Add kale and bacon to the bubbling soup until the kale is tender
(5 min).
While kale is cooking, pour the heavy whipping cream into a microwave safe container. Microwave for 30 - 60 seconds to break the chill. Reduce the heat of the soup to low. When soup is no longer boiling, slowly add the whipping cream while stirring. This will help the cream to not curdle. Lastly, add your white wine vinegar to the soup. Taste to see if salt and pepper is needed. Add if needed. Serve your master piece.

Well Family, This is my first attempt at adding a recipe with my “Timmy’s Twist.” From the first time I tasted the Zuppa Toscana soup at Olive Garden, I knew I had to add it to our family menu. My “twist” on this recipe makes it a little more heartier. I doubled the meat and use more cream and chicken stock than online recipes. You really can’t mess this one up. It’s a great soup for those chilly fall evenings. I can almost hear my mama say, “Timmy, that would be a great soup for the month of “OPTOBER!”❤️😂
