1 cup sugar
1/2 cup shortening
2 eggs
1 tsp vanilla
1 tsp baking soda
4 ripe bananas
1/2 tsp salt
2.5 cups flour
Chocolate chips and or nuts are optional

Directions:
Directions:
Preheat oven to 350 º
Grease muffin tin

Beat together sugar and shortening until smooth and fluffy.
Add bananas, vanilla, eggs, salt, baking soda until creamy.
Add flour, one cup at a time.

Fold in nuts and or chocolate chips.

Scoop into muffin pan about 3/4 full.

Bake in oven for about 18 - 20 minutes.

This is one that I make almost every week. The girls love the little mini muffins and their friends do too. I got this recipe from my mama, who also makes it often. The house smells great when these are in the oven:)
