3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1 small garlic clove, minced
1/2 teaspoon dry mustard
Pinch cayenne pepper
2 cups whole milk
1 cup chicken broth
8 ounces Colby Jack cheese, shredded (2 cups)
4 ounces cheddar cheese, shredded (1 cup)
Salt and pepper

Directions:

Melt butter in large saucepan over medium heat. Whisk in our, garlic, mustard, and cayenne and cook until fragrant, about 1 minute. Slowly whisk in milk and broth until smooth. Bring to simmer and cook, whisking often, until thickened, about 15 minutes.

Off heat, gradually whisk in Colby and cheddar until melted. Season with salt and pepper to taste. Serve immediately.

This modern Mornay sauce makes a great topping for roasted vegetables, baked potatoes, or nachos. You could also use it as a dip for ballpark pretzels. Avoid using sharp or extra-sharp cheddar, which can make the sauce grainy.
